With 20 percent of the U.S. population located in New York and the Northeast, New York dairy farms are conveniently located to serve the consumer and respond to market demands. Currently, there is an increasing demand for milk in New York State, greatly due to the boom in Greek yogurt. New York has 29 yogurt processing plants, up from 14 ten years earlier, that use nine percent of New York’s milk production. Market projections indicate that with this kind of growth in the yogurt industry, there will be a need for more cows in the very near future.
